Birria Stew

Ingredients

  • 8lbs Beef, Inside Round
  • 4oz La Ranchera Birria Base
  • 5 Bay Leaves
  • 1qt Water
  • **OPTIONAL** CHOOSE 1
  • 1tbs Major Products Chicken Base or 1tbs Major Products Beef Base

Directions

  1. Trim beef to fit into the pan/pot leaving beef in as large of sections as it will fit.
  2. Pre-measure the birria base from the jar.
  3. Generously rub the exterior of the beef chunks with the birria base
  4. Add remaining birria base and option chicken or beef base to water
  5. Place beef into pot/pan, cover with stock made with base and water.
  6. For Crock Pot: cook covered on high for 4 hours reduce to warm and cook until fork tender (2-3 additional hours)
  7. For oven: place in pan cover with foil cook at 325 degrees for 6 hours, pull from oven, leave foil tightly wrapped and allow to rest for minimum 1 hour.
  8. Pull beef into desired size chunks.
  9. Strain liquid through a sieve, putting the catchings back into the pulled beef.
  10. Allow fat to rise on the liquid and skim off for use on the tortillas.
  11. Once fat is removed add 1 cup liquid back to the pulled beef. retain remaining liquid for service on the side as dipping liquid.
  12. Hold meat and liquid between 141-175 degrees for up to 4 hours. oil can remain at room temperature.
  13. FOR FUTURE USE: Follow similar directions above only cool beef and liquid to below 41 degrees with in 4 hours in separate containers. Remove wand, cover with a lid, label, date and refrigerate
