Bean & Chorizo Soup
Ingredients
- 2 oz. Cashew Nuts
- 2 TBSP Olive Oil
- 1 1/4 Cup Small Diced Shallots
- 2 Cups Canned drained Beans of choice
- 2 Cups Sliced Chorizo Sausage
- 1 1/2 tsp. Dried Thyme
- 1 1/4 Cups Small diced Celery
- 1 1/2 TBSP Pureed Garlic
- 3 Quarts Water
- 4 TBSP 22363 Elite Major Signature Chicken Base, No MSG Added 00073292223631 Elite Signature Chicken Base.
- 4 TBSP 23503 Elite Major Ham Stock Base, No MSG Added 00073292235030 Elite Ham Base
- 1/3 Cup Corn Starch
- Pinch Salt & Pepper
Directions
- Sauté shallots in olive oil until translucent
- Add sausage, beans, thyme, garlic & celery and mix well
- Bring water to boil
- Add Elite Chicken & Ham Base & whisk well
- Add sauteed sausage and beans, blend, and simmer for 15 minutes
- Add a little water to corn starch to make paste
- Whisk in corn starch paste and simmer for 5 minutes
- Salt & pepper to taste
