Potato and Leek Soup

Ingredients

  • 2 Cups Small Sliced Leeks
  • 1/2 Cup Butter
  • 1 1/4 Cup Flour
  • 2 1/2 Cups Large Diced Potatoes
  • 8 TBSP 29803 Elite Major Mirepoix Stock Base, No MSG Added 00073292298035 Elite Mirepoix Base
  • 2 1/4 Quarts Water
  • 2/3 Cup Milk
  • 5 Pieces Fresh Leek Strips
  • Pinch Salt

Directions

  1. Wash leeks thoroughly to remove all dirt and debris
  2. In large soup pot, melt butter and leeks.
  3. Add flour and mix well and cook at low heat for 4-5 minutes
  4. Add to leek and flour mixture
  5. Mix Elite Mirepoix Base with water and slowly whisk into leek & flour roux
  6. Bring to boil then simmer till potatoes are tender
  7. Heat milk & add to soup
  8. Add salt to taste
  9. Garnish with fresh leek strips
