Shrimp Bisque
Ingredients
- 1/3 Cup 23666 Elite Major Shrimp Stock Base, No MSG Added 10073292236669 Shrimp Stock Base
- 1 Lbs. Shrimp w/Shells
- 2 oz. Unsalted Butter
- 2 Quarts Heavy Cream
- 1 Each Carrot
- 1 Each Leek
- 1 Each Onion
- 1/3 Cup Tomato Paste
- 1 1/3 TBSP Sweet Papricka
- 2 Cloves Garlic
- 1 Medium Shallot
- 1 Cup White Wine
- 1 Cup Water
- 3 oz. Brandy
- Pinch Salt to Taste
- Pinch Pepper to Taste
Directions
- Peal and clean shrimp (save shells)
- Saute shells in 1 oz of butter
- Add garlic and shallot minced
- Saute
- Add Mirepoix,water and wine and allow to simmer for 20 minutes
- Saute shrimps in remaining butter
- Place shrimps in container to collect juices
- In new pot saute paricka and tomato paste
- Add shrimp base and saute
- Add strained shell broth and any juice from shrimps stirring
- Simmer and thourghly mix
- Add heavy cream and cook to desired thickness being careful to not allow to boil over
- Add Brandy and adjust seasoning as desired
- Depending on size of shrimp (cut up or serve whole) and place in serving bowl
- Add pipping hot bisque and enjoy!
