Bean and Chorizo Soup

Ingredients

  • 2 oz. Cashew Nuts
  • 2 TBSP Olive Oil
  • 1 1/4 Cup Small Diced Shallots
  • 2 Cups Canned drained Beans of choice
  • 2 Cups Sliced Chorizo Sausage
  • 1 1/2 tsp. Dried Thyme
  • 1 1/4 Cups Small diced Celery
  • 1 1/2 TBSP Pureed Garlic
  • 3 Quarts Water
  • 4 TBSP 22363 Elite Major Signature Chicken Base, No MSG Added 00073292223631 Elite Signature Chicken Base.
  • 4 TBSP 23503 Elite Major Ham Stock Base, No MSG Added 00073292235030 Elite Ham Base
  • 1/3 Cup Corn Starch
  • Pinch Salt & Pepper

Directions

  1. Sauté shallots in olive oil until translucent
  2. Add sausage, beans, thyme, garlic & celery and mix well
  3. Bring water to boil
  4. Add Elite Chicken & Ham Base & whisk well
  5. Add sauteed sausage and beans, blend, and simmer for 15 minutes
  6. Add a little water to corn starch to make paste
  7. Whisk in corn starch paste and simmer for 5 minutes
  8. Salt & pepper to taste
