Shrimp Bisque

Ingredients

  • 1/3 Cup 23666 Elite Major Shrimp Stock Base, No MSG Added 10073292236669 Shrimp Stock Base
  • 1 Lbs. Shrimp w/Shells
  • 2 oz. Unsalted Butter
  • 2 Quarts Heavy Cream
  • 1 Each Carrot
  • 1 Each Leek
  • 1 Each Onion
  • 1/3 Cup Tomato Paste
  • 1 1/3 TBSP Sweet Papricka
  • 2 Cloves Garlic
  • 1 Medium Shallot
  • 1 Cup White Wine
  • 1 Cup Water
  • 3 oz. Brandy
  • Pinch Salt to Taste
  • Pinch Pepper to Taste

Directions

  1. Peal and clean shrimp (save shells)
  2. Saute shells in 1 oz of butter
  3. Add garlic and shallot minced
  4. Saute
  5. Add Mirepoix,water and wine and allow to simmer for 20 minutes
  6. Saute shrimps in remaining butter
  7. Place shrimps in container to collect juices
  8. In new pot saute paricka and tomato paste
  9. Add shrimp base and saute
  10. Add strained shell broth and any juice from shrimps stirring
  11. Simmer and thourghly mix
  12. Add heavy cream and cook to desired thickness being careful to not allow to boil over
  13. Add Brandy and adjust seasoning as desired
  14. Depending on size of shrimp (cut up or serve whole) and place in serving bowl
  15. Add pipping hot bisque and enjoy!
