Chipotle Beer Cheese Soup

Chipotle and Beer cheese soup
Serves 10-12

Ingredients

  • 16 oz. Unsalted Butter
  • 2 Cups Yellow Onion, Finely Chopped
  • 3 Cups Poblano Pepper, Chopped
  • 2 Cups Yellow Bell Pepper, Chopped
  • 2 TBSP Garlic, Minced
  • 2 Cups Celery, Chopped
  • 1/2 Cup Jalapeno Pepper, Seeded and Chopped
  • 1 Cup All-purpose Flour
  • 2 Quarts Water
  • 24 oz. Your Favorite Mexican Beer
  • 1/4 Cup 20366 Elite Major Chipotle Base, No MSG Added 10073292203661
  • 3 1/2 Cups Cheddar, Shredded
  • 2 Cups Heavy Cream

Directions

  1. Melt butter in Dutch oven
  2. Add onion, peppers, garlic, celery and jalapeno to pot. Sauté until softened and fragrant; about 10 minutes
  3. Stir flour thoroughly into vegetables. Cook for 2-3 minutes
  4. Stir water, beer and Chipotle Base into flour/vegetable mixture
  5. Stirring frequently, bring mixture to a boil
  6. Simmer for 20-30 minutes
  7. Add Cheese to pot. Stir to melt
  8. Puree soup. Run through a fine-mesh strainer, discarding any fibrous remains
  9. Add cream and bring to temperature
  10. Stir diced ham into soup
  11. Hold on Steam Table at 160°F
