Mushroom and Roasted Garlic Soup

Ingredients

  • 2 TBSP Garlic
  • 7 TBSP Butter
  • 4 TBSP Shallots
  • 1 Cup Flour
  • 2 Quart Water
  • 8 TBSP 24403 Elite Major Mushroom Stock Base, No MSG Added 00073292244032 Elite Mushroom Base
  • 3 Cups Sliced Mushrooms
  • 2/3 Cup Heavy Cream
  • Pinch Salt
  • 1 tsp. Fresh Chopped Parsley
  • Crème Fraîche

Directions

  1. Roast garlic cloves in 350°F oven until soft & golden brown
  2. Melt butter in pan and sauté shallots until translucent (not brown)
  3. Add flour to make a roux, cook until tan in color
  4. Bring water to boil
  5. Add Elite Mushroom Base to boiling water and mix well
  6. Slowly whisk in roux
  7. Add Mushrooms and roasted garlic
  8. Add Heavy Cream & simmer for 5 minutes
  9. Salt to taste
  10. Add Fresh Parsley to garnish
  11. Drizzle Crème Fraiche if desired
