Mushroom & Roasted Garlic Soup
Ingredients
- 2 TBSP Garlic
- 7 TBSP Butter
- 4 TBSP Shallots
- 1 Cup Flour
- 2 Quart Water
- 8 TBSP 24403 Elite Major Mushroom Stock Base, No MSG Added 00073292244032 Elite Mushroom Base
- 3 Cups Sliced Mushrooms
- 2/3 Cup Heavy Cream
- Pinch Salt
- 1 tsp. Fresh Chopped Parsley
- Crème Fraîche
Directions
- Roast garlic cloves in 350°F oven until soft & golden brown
- Melt butter in pan and sauté shallots until translucent (not brown)
- Add flour to make a roux, cook until tan in color
- Bring water to boil
- Add Elite Mushroom Base to boiling water and mix well
- Slowly whisk in roux
- Add Mushrooms and roasted garlic
- Add Heavy Cream & simmer for 5 minutes
- Salt to taste
- Add Fresh Parsley to garnish
- Drizzle Crème Fraiche if desired
